Chilled Broad Bean, Pea and Mint Soup
If you're looking for a quick and easy starter to serve your dinner guests this summer, then look no further than our resident chef Hannahs' summer soup.
Made chilled using broad beans, peas and mint, this receipe is perfect for cleansing the palate before serving your main course .
Make this dish even more attractive by presenting them to your guests in tea cups!
Serves 8 people.
Ingredients
Available from British Corner Shop
- 1/2 a tin of Eazy Fried Onions
- 1 tin of Batchelors Broad Beans- Drained
- 1 tin of Batchelors Garden Peas- Drained
- 1 tsp of Colmans Fresh Green Mint Sauce
- 2 Knorr Ham Stock Cubes - Made as directed
To be Sourced Locally
- Fresh Mint to Garnish
Method
Fry the onions for a couple of minutes until sizzling.
Add the peas and beans, pour over the stock and stir in the mint sauce.
Season to taste.
Simmer for ten minutes to allow the flavours to infuse.
Chill thoroughly then blend using a standard blender or a stick blender.
Serve in tea cups and garnish with a little ground pepper and fresh mint.
