I love Uncle Ben's express microwavable rice. You have a tasty side dish ready in 2 minutes instead of over 10 minutes, without having to do the dishes afterwards. The Mexican rice is one of my favourites as it is not too spicy. I like to add some thinly sliced red pepper and onion for extra vegetables.
