I enjoy chilli but most often I find it too hot for my palate and consequently I do not order it in a restaurant. My son who is a chef taught me how to make my own, he bought this particular brand of red kidney beans as he said they were the best.
Well... I watched him and thought yes I can do this so a few weeks later I replicated his recipe. I did however get carried away and made enough chilli to feed the entire armed forces!
I consequently froze it in batches, he was correct about the quality of these kidney beans as they did not loose any integrity of flavour from the freezing process. Further, they did not fall apart or become mushy.

Red kidney beans are great to use in chili con carne. Usually I buy these Napolina ones, since they are firm and taste good.
Although chili con carne is the food that I use these for, I can well imagine these would be suitable to numerous other meals, like pastas or other rice based foods.
Beans should always be a healthy addition.
