This is such a difficult ingredient to find! Thrilled to see it here. Tamarind has a uniquely tangy flavour that works brilliantly in certain curries I love using it in a sour lentil dahl. It's also indispensable if you're planning to make pad thai there simply aren't any substitutions that taste quite right!
