Baxter's carrot and coriander soup is one of my favourite combinations. It has the right balance of sweetness derived from the carrot and touch of parsnip and the delicate flavour of coriander comes through nicely. I like to grate a little fresh parmesan on once it's heated through and serve with a crusty bread roll.
